Selection
Mushroom pate - mixture
of mushrooms, onions and garlic sauteed in
butter, sherry and cream cheese. Served with a
variety of crackers.
Pork pate - pork loin
cooked in chicken stock, white wine and herbs,
then pureed with butter and cognac.
Spicy cheddar shortbread's
- savory cookie made with sharp cheddar
cheese, toasted walnuts and a bit of cayenne
pepper.
Cheddar sherry spread -
creamy mixture of sharp cheddar cheese, sherry
and sour cream. Served with a variety of
crackers.
Bleu cheese cognac spread
- tangy bleu cheese, cream cheese, chopped
scallions and toasted walnuts with cognac.
Served with a variety of crackers.
Crostini or little toasts
- served with some or all of the following dips
or spreads; Olive tapenade, Tuscan white bean
dip, Roasted red pepper dip, Eggplant spread,
Sun-dried tomato tapenade.
Chicken pecan ball -
poached chicken, curry, capers, mango chutney,
green onions blended with cream cheese.
Pita chips - served with
2 of the following dips or spreads; Hummus,
Tabbouleh, Yogurt cucumber dip, Baba Ganoush,
Flavored hummus.
